Nutrition Before Bedtime

For dinners I'm a little unconventional because I do spend a lot of time with my kids and not so much time with my husband. I believe in family meals, but we tend to do family breakfasts rather than dinners.

I have an afternoon meal for my kids around 5:00 and it involves things that will be in my meal with my husband later. So if I was making a salad that had hard boiled eggs, I would leave some eggs whole and serve them to my kids. I also serve them cut up vegetables and fruits, cheese and crackers and lunch meats.

Most of the time my kids have had enough protein during the day, but often the hardest thing to get them to eat in the morning and at lunch is vegetables. So often, I serve them only vegetables for dinner. Things like a baked sweet potato, frozen corn and some broccoli and carrots.

If they don't have an option with meats and breads, they tend to eat all of their vegetables. So their day ends with a nice healthy meal and then they go on to their bedtime routine.
